For the dough

•  Flour – one cup
•  Butter, cold and diced – one tablespoon
•  Egg – one
•  Apple cider vinegar – one teaspoon
•  Sugar – one tablespoon
•  Kosher salt – ½ tsp

For filling

•  Raw honey – one tablespoon
•  Fresh and sliced figs – 1 pt
•  Spring mint
•  Sugar – one tablespoon
•  Turbinado sugar


•  Combine flour, sugar and salt in a bowl and mix briefly. Add butter and egg inside the bowl and once again mix well. Cover the dough with a plastic wrap and refrigerate for 2 hours.

•  Preheat the microwave oven at 350 degrees. Roll out the dough over a surface until it is about a half inch thick. Now, roll it out from the centre so as to form a circle. Transfer it to the baking sheet carefully.

•  Position the fig slices over the dough in concentric circles and sprinkle the sugar and honey over the figs. Spread out the mint over the top.

•  Fold over the borders and close any hole using the extra dough.

•  Brush the borders with water and sprinkle the turbinado sugar over it.

•  Bake the galette for about an hour and let it rest for about fifteen to thirty minutes before slicing it.
